My husband and I love to snack on Nachos (particularly loaded nachos?) so I wanted to find a way to make this snack a little bit on the healthier side. I remember years ago making this recipe and while I was grocery shopping I cam across these mini bell peppers and I thought this would be so appropriate since Cinco De Mayo is this week!
This recipe is super easy and very adaptable to whatever you might have in your pantry. There are so many variations you can do – and it will be soo good with whatever is on it! I had some ground beef (I usually opt for ground turkey) cheddar cheese, tomatoes, onion, jalapeno peppers and guacamole. You can easily add black beans, salsa, sour cream, shredded lettuce or so many other different things. You can also make this vegetarian by not using any meat and adding in some refried beans!
Homemade Healthy Nacho Recipe
INGRIEDIENTS:
- Mini Bell Peppers
- Ground Beef or Turkey
- Taco Seasoning
- Shredded Cheese (I used cheddar)
- Diced Tomato
- Diced Onion
- Guacamole
- Jalapeno peppers sliced
- Other Ideas- Salsa, Sour Cream, Cilantro, Shredded Lettuce, Beans
DIRECTIONS:
1.) Preheat oven to 400 Degrees. Wash and Slice your peppers and arrange on a baking sheet. Make sure to keep them pretty close together since when you load them up with the beef and toppings it wont get all over the sheet pan.
2.) Brown your meat and add in the taco seasoning. I like to make sure the meat is cooked through since these only bake for about 10 minutes in the oven. Put the browned meat on top of the peppers on the sheet pan and add your cheese. Bake in the oven for 8-12 Minutes until cheese is melted and peppers are slightly soft.
3.) Time to add your toppings! Add all your cold toppings and top with some guacamole. You can use store bought or make your own. I made my own and used Avocado, Lime Juice, red onion, tomato, salt and pepper. I normally will add cilantro but was all out. And you are all set! Such a fun little lunch or snack.
