I am always experimenting and trying to make some easy + healthy snack and Lunch ideas and I think I hit the jackpot with these! They are low carb and SO good. These are great if you follow a keto diet since they have all low carb ingredients and BACON! You can opt out of using real bacon in these obviously and use turkey bacon- I am sure they would be equally as delicious. It took me about 15 minutes total to make these (if that It only took that long since I boiled eggs and made the bacon but you can store this stuff premade in the fridge) and they are great to make as a snack, lunch or even an appetizer! I also took the yolk out of these but you don’t have to! I am not going to list out exact amounts below since it depends how many you are making but I recommend making a few pieces of bacon and a few hard boiled eggs and saving them to make these throughout the week if you are having them as a quick snack/lunch!
- Hard Boiled Eggs
- Tomato sliced
- Romaine Lettuce
- Mayo + Sriracha
- Everything But the Bagel Seasoning (or salt and pepper)
Hard boil your eggs and prep your Bacon. Mix a little Mayo + Sriracha sauce together to make some spicy Mayo. Slice your eggs and remove the yolk from your eggs (or keep them if you like them!) and add in a little Spicy Mayo on one side. Slice your tomato and lettuce. Assemble each little egg sandwich by placing a little bacon, tomato and lettuce as you would make a sandwich and use a toothpick to keep both sides of the egg together. Sprinkle with some Everything Bagel Seasoning and enjoy!
