The Easiest Feta String Bean Salad

I am really pretty simple when it comes to cooking. I love to cook but having a family and working really doesn’t allow me to make things like I used to. No that I ever make anything TOO complicated haha but I was able to experiment more. I love things that require little cooking and come together FAST! This string bean salad requires about 10 minutes of your time and comes out so good! It is even husband approved and perfect to make last minute in the summertime (or really all year long my mom used to make a variation of this for christmas with mini mozzarella balls and display it in the shape of a wreath) Everything is to taste and I dont really think you need exact measurements it really depends on how much you need and your own preference. I will say I added way too much Feta cheese. I used the entire block but you really only need about half (unless your really love feta haha)

Ingredients:

Blanched String Beans

Feta (I got a block of it and grated but they sell it crumbled too. I used the entire block but I recommend using half since I felt it was too much)

Tomatoes (I usually like to get the yellow ones but they didn’t have them this week at the grocery store)

Oil, Vinegar, Oregano, Salt and Pepper (and any other spices you like!)

Directions:

Blanch your stringbeans. I usually do this in my Always Pan since it has the basket insert (I will link it below) and it’s also so easy to clean. While your string beans are cooling down grate your feta cheese and slice up your tomatoes. Add everything together and add on your Oil and Vinegar and spices. I like to chill mine in the fridge for a little before serving!
