I am a sucker for anything buffalo! My weakness is definitely buffalo chicken dip😅 so I wanted to do a skinny version! And best part is its cooked in a crock pot so you don’t have to dirty dishes OR stand over the stove. You basically just throw everything in and let it cook. SO simple and yummy.
1.) Cook your chicken in the crockpot for about 4 hours on high or 6-7 on low. If you are using precooked rotisserie chicken you just have to shred it. (if you are using precooked rotisserie chicken you dont need the crock pot you can just do the following steps in a pot on the stove)
2.) Once the chicken is cooked, shred it. Empty out the excess water the chicken cooked in. Once emptied, add in the rest of your ingredients. Stir together and let cook together on low for about 30-45 minutes.
3.) Serve with Tortilla chips, carrots, Celery, pita chips, potato wedges or my new favorite is have the buffalo dip in a taco wrap! SO good and makes for a perfect dinner.
The most simple OOTD! Wanted to pop in and give you guys some Tuesday inspo! I have actually had this dress for 2+ years now and I am constantly finding myself wearing it. My husband and I love to snack on Nachos (particularly loaded nachos😂) so I wanted to find a way to make this snack a little bit on the healthier side. I remember years ago making this recipe and while I was grocery shopping I cam across these mini bell peppers and I thought this would be so appropriate since Cinco De Mayo is this week!
This recipe is super easy and very adaptable to whatever you might have in your pantry. There are so many variations you can do – and it will be soo good with whatever is on it! I had some ground beef (I usually opt for ground turkey) cheddar cheese, tomatoes, onion, jalapeno peppers and guacamole. You can easily add black beans, salsa, sour cream, shredded lettuce or so many other different things. You can also make this vegetarian by not using any meat and adding in some refried beans!
Homemade Healthy Nacho Recipe
Mini Bell Peppers
Ground Beef or Turkey
Shredded Cheese (I used cheddar)
Jalapeno peppers sliced
Other Ideas- Salsa, Sour Cream, Cilantro, Shredded Lettuce, Beans
1.) Preheat oven to 400 Degrees. Wash and Slice your peppers and arrange on a baking sheet. Make sure to keep them pretty close together since when you load them up with the beef and toppings it wont get all over the sheet pan.
2.) Brown your meat and add in the taco seasoning. I like to make sure the meat is cooked through since these only bake for about 10 minutes in the oven. Put the browned meat on top of the peppers on the sheet pan and add your cheese. Bake in the oven for 8-12 Minutes until cheese is melted and peppers are slightly soft.
3.) Time to add your toppings! Add all your cold toppings and top with some guacamole. You can use store bought or make your own. I made my own and used Avocado, Lime Juice, red onion, tomato, salt and pepper. I normally will add cilantro but was all out. And you are all set! Such a fun little lunch or snack.
Mother’s day is right around the corner and I always struggle with this holiday. I love a good LBD! I think dresses are super comfy to wear especially when the warmer weather starts coming around so I wanted to style one a few different ways! The one I am wearing is from Abercrombie, but I also linked up a bunch of others that can work well with this! Throughout the years I have always had good and bad periods of time with my skin. One week it would be clear the next week I would be back to where I started. I never had bad acne but I have always struggled with breakouts and it was hard for me to get to the point where I felt ok leaving my house without makeup. Over the last few months especially I found my skin breaking out weekly. One patch of my skin would clear up and the next day there would be a whole new set of breakouts appearing.
Since I have been home so much more I thought maybe not wearing makeup would clear my skin up and make it healthy. This was actually the opposite. I started breaking out more- I thought maybe this is from stress. Then I realized since I wasn’t wearing makeup I wasn’t really cleaning my face and taking care of my skin as I normally would. I also found out that a-lot of the products I was using actually contain beneficial ingredients for your skin like vitamin C. Fast forward a month later. My skin has been so clear and I can really say I feel good about it. Since I had such a good experience with what I was doing I wanted to share it with you guys so maybe you would have the same experience as me!
1.) Celery Juice– I didn’t believe it would work and it was hard for me to believe all the benefits. I can truly say this has helped not only my skin but my energy levels are up and I feel good. I found the easiest way to make celery juice is to use a juicer. I got THIS one.

I saw my acne not only disappearing more quickly, but the scarring that is usually left behind from when I break out and discoloration was almost non existent. 3.) Use a facial Toner! I have found that using a facial toner makes such a huge difference! It made my skin hydrated and not dry and dull looking- which was what I found was happening using a lot of acne clearing solutions. I use THIS ONE or you can make your own. 4.) Don’t Skip Sunscreen. Wear it everyday! Even in the Winter months. Not wearing sunscreen can cause acne scaring and major skin discoloration. 5.) Sanitize! Wipe your phone down. People dont realize this but holding your phone up to your face causes oil to rub against it which in turn can cause your skin to breakout. So clean your phone and any other items that touch your face. I also use a Microneedler some nights- make sure you are cleaning stuff like this too. Same with your makeup brushes, beauty blenders and facial rollers!
