Warm weather can’t stop me from enjoying slow cooker meals!
Slow cooker peach chicken is a wonderful dish that can be enjoyed not only during cold weather but also in the warm summer months. The slow cooker method ensures that the chicken becomes incredibly tender and juicy, creating a delicious texture that is so satisfying no matter the weather outside. I am a big fan of slow cooker meals all year long since they make my life easier. Usually my days are pretty busy and the last thing I want to do is cook dinner. With this meal I throw everything into the crockpot early in the morning and let it cook throughout the day. It makes my house smell amazing too! and the best part is its using seasonal produce and I usually will go pick the basil from my yard.
You can enjoy it as a standalone main dish alongside fresh salads or grilled vegetables for a light and satisfying summer meal. I like to serve this with some wild rice or pasta and its also toddler approved.

Slow Cooker Peach Chicken
Ingredients
- 4-5 boneless skinless chicken thighs
- 1 small white onion (thinly sliced)
- 6 peaches sliced (skin on it softens)
- ΒΌ cup balsamic vinegar
- 1 tsp garlic powder
- 1 tsp onion powder
- salt and pepper to taste
- 1/4 cup fresh basil leaves
Instructions
- Place the chicken thighs, sliced onions, peaches, vinegar, spices and salt and pepper in the slow cooker and mix together well.
- Cook on low for 6 hours or high for 4-5 hours. About 30 minutes before finishing add in the fresh basil leaves.
- Top with extra sliced peaches and basil and serve over rice or pasta. I like to add in a little hot sauce too!
