Easy & Healthy Yogurt Bark Snack Idea 🍓

I always find myself reaching for a late night snack and I need something easy and fast most nights. I love greek yogurt and wanted to find a way to mix it up a little! It is still freezing here in New Jersey but this would also make such a good treat in the summer since it is frozen.

There are so many variations of this recipe another thing I love about it! You can use any flavor greek yogurt or even plain yogurt and add in a little agave or honey to add a little sweetness! For toppings, you can use any fresh or frozen fruit. I usually use frozen since I always keep frozen fruit in my freezer for smoothies. Next is the peanut butter, my favorite! I have also used nutella too and it is equally as good! Tip for when you spread the Peanut butter or nutella- microwave it for a few seconds so it it can be poured onto the yogurt a little easier. Some other toppings you can add are nuts, chocolate chips, coconut, and granola. Super simple and done with a minimal mess in the kitchen. My kinda recipe.

Ingredients:

  • 1 cup Greek Yogurt (any flavor Vanilla and Strawberry are my favorites but plain yogurt with some honey/agave to sweeten it is also good. I personally like full fat yogurt but you can use any type!)
  • Frozen or Fresh Berries
  • Coconut (you can toast is too!)
  • 2 tbsp Melted Peanut butter or Nutella

Directions:

Spread a layer of yogurt on wax paper and add in all your toppings. I usually melt the nut butter so it drizzles easier. Put in the freezer for 2-3 hours and crack into pieces. Store in the freezer until ready to eat.

If you follow me over on Instagram, you know I am always on the hunt for healthier snack options for my husband and I. I especially looks for items that will curb by sweet tooth craving and are low in sugar. Let me tell you this is not easy to find and I find myself usually in the kitchen making a big mess cooking up something LOL. These snacks not only help curb your sweet tooth, but they are also good for you too! There are no artificial flavors, trans fat, Cholesterol, and they are low in fat and sodium. They are also made with whole grains, and are a good source of vitamin C, B1, B2 and iron. Sounds like a win to me!

I was excited to try out Tosh Snacks products and I was also so happy to find that these products taste SO good too. They make a great snack for kids lunches, and they are even great for the adults in your family. I love how the cookies come in individually wrapped packages of 2 and really help to stop you from overeating (we’re all guilty of that!) and are easy to bring on the go.

I decided to make a yogurt parfait today with the Blueberry and Acai cookies it was so easy and a great mid-day snack! I started out by crushing up the cookies and layering with fresh blueberries and plain yogurt. Easy + quick and a great on the go breakfast and I love anything that takes under 5 minutes!

Fresh Blueberries

Directions:

In a clear cup or to go Tupperware layer crushed Tosh Snacks Blueberry Acai Cookies (you can also try the other flavors too!) a layer of fresh berries and then some plain yogurt and repeat so there are two layers of each and enjoy!

#Homegating with ShopRite!🏈

For as long as I can remember I do my normal weekly grocery shops at ShopRite! They have the freshest produce and everything I could ever need to make healthy meals throughout the week. I wanted to highlight something I have been doing lately though instead of going to the grocery store- I have been ordering my groceries through the ShopRite App on my phone and having them delivered or picking them up- it’s super easy. You place your order on the app, pick a time slot for delivery/pickup and thats it! Easy, fast and most importantly it allows me more time at home with my Husband and our pets! My favorite thing!

Over the weekend I made some snacks for us to watch the football games! We had our groceries delivered from ShopRite and then we got to work! We made Wonton Tacos or as I call them “taco cupcakes” together and they were SO good. Basically they are just little taco shells with all the stuff thats in a taco. I listed how to do it and what you need below.

Ingredients:

  • 1 package Ground Beef or Turkey
  • 1 package Wonton Wrappers
  • Olive oil spray (i used Pam)
  • packet Taco Seasoning
  • about 2 cups Shredded Cheese (I used cheddar)
  • Toppings! Whatever you like I used Salsa, Guacamole, Sour cream and Olives

Directions

1. Preheat oven to 400 degrees. Brown your ground beef and add in the Taco seasoning. In the meantime, Spray a cupcake tray with your Olive Oil spray.

2. Place the wonton wrappers like you would a cupcake paper in each little well. Once your meat is cooked, place about a tablespoon in each wonton wrapper and top the meat with some shredded cheese. Then repeat this again- top with another wonton wrapper, meat, and cheese and you will basically have two layers. I press each layer down with a spoon too.

3. Bake them in the oven for about 8 minutes. Keep an eye on them they brown fast!

4. Garnish your taco cups. I top mine with some guacamole, Sour cream, fresh salsa and black olives. You can add anything though- taco sauce and green onions are some other ideas!

5. Enjoy!!

Healthier Truffle Popcorn🍿

Who else loves popcorn?! I looove more than anything sitting down to watch a movie and having some popcorn (and wine😂 ) and watching a movie. Movie theatre and pre-made popcorn has so many unnecessary things in it like preservatives and not to mention tons of butter and sodium. I have been making popcorn on my stove for years- or you can get an air popper (linked one that is about $30 HERE) I just never really felt it was necessary but it does make it easier if you would prefer not to use your stove top.

I recently have been obsessed with anything truffle since its sooo flavorful! I found truffle oil and a powder truffle zest on Amazon and have been experimenting with it. I have been using it on veggies and pasta and now popcorn and it is SO good. All I do is pop some popcorn in olive oil (since you need a high eat oil) then I drizzle the truffle oil in place of butter and add some of the powdered zest and some sea salt and you have yourself a delicious snack! Okay SO this post has taken me a while to get to BUT I am super excited to finally have it up! Moving into a new house and purchasing furniture takes soo much more time than I thought it would. We have majority of the big items, but there are still so many little things that I am wanting to get.
