Chipotle Guacamole

One of my favorite things to snack on is chips with guacamole. 

I love how easy it is to make Chipotle guacamole and you will too with this recipe as it allows you to enjoy this delicious dish without having to spend a lot of time or effort in the kitchen.

With just a few simple ingredients and some basic prep work, you can whip up a batch of this copycat guacamole that tastes just as good as the original Chipotle version. Not only is it a great way to save money and a trip to Chipotle-  but it will allow you to customize the recipe to your own tastes and preferences (you can make it spicy or less hot depending on how you like it). Plus, this is a healthier option than many store-bought dips, as it is made with fresh, whole ingredients and doesn’t contain any preservatives or additives.

Copycat Chipotle Recipe

Course Snack

Ingredients
  

  • 2 Ripe Hass avocados
  • 2 tsp Lime juice
  • 2 tsp Cilantro (chopped)
  • 1/4 cup Red onion
  • 1/2 Jalapeño including seeds
  • 1/4 tsp Kosher salt

Instructions
 

  • Cut avocados in half and remove pits.
  • Scoop the avocados into a bowl.
  • Toss and coat with lime juice.
  • Add the salt and mash until it's a smooth consistency.
  • Fold in the remaining ingredients and mix.
  • Taste the guacamole and adjust the seasoning.

Notes

This is Chipotle's recipe, I doubled mine and I also use a chopper for the onions and jalapeño.
 
FOR THE CHIPS:
Take small corn tortillas and cut them into 4's. Brush both sides of the tortilla with olive or vegetable oil (I also added a squeeze of lime juice to the oil) and sprinkle with a generous amount of salt. Bake at 425 for 5 minutes and then flip and bake for another 4 - 6 minutes or until crispy.
