Dill Pickle Pasta Salad

I can’t believe it is already June and we are basically in the “unofficial” beginning of Summer (since technically it’s not until the end of June and it’s still Spring but the weather is beautiful!) This is the time of year all of the BBQ’s start!  Are you looking for a delicious side dish for a barbecue, a potluck, or simply to add to a meal? This Dill Pickle Pasta Salad is the perfect choice.

Dill pickles have to be one of my favorite things ever! I feel like you are either a pickle fan or not a pickle fan but since I was a kid I have loved them! Adding them to pasta salad is a good idea, trust me! They add a little crunch and a lot of flavor and not to mention the health benefits of pickles! Did you know they are actually super good for you?

This is so easy to make. You just have to cook the pasta and add all the ingredients to a bowl and mix them all together!

Dill Pickle Pasta Salad delicious dish that is perfect for summer. It’s easy to make and can be served in many ways, making it a versatile addition to any meal. I also even like to make this to store in the fridge to have for lunch. The addition of the greek yogurt gives this some added protein too!  I promise you guys will love this!

Dill Pickle Pasta Salad

Ingredients
  

  • 16 oz rotini pasta cooked, drained, and rinsed in cool water
  • 2 cups whole dill pickles diced
  • 1 1/2 cups cheddar cheese (cubed or shredded)
  • 1-2 tbsp  fresh dill chopped
  • Dressing:
  • 1/2 cup mayonnaise
  • 1/2 cup plain greek yogurt (or sour cream)
  • 2 tbsp dill pickle juice
  • salt and pepper to taste

Instructions
 

  • Boil Pasta and allow it to cool completely.While Pasta is cooling chop up pickles and dill.
  • In a large salad bowl add the cooled pasta, dill pickles, cheese, fresh dill, and dressing ingredients. (I added the dressing ingredients to the bowl individually but you can also mix it in a bowl first.)
